The dough should be soft, not very stiff, smooth to the touch. Check that it lags well from your hands.

5. Then divide the dough into two parts. They will not be the same, one larger than the other. Can be distributed in a ratio of 1/3 and 2/3. Set aside most of it to be used for the base of the pie.
