Ingredients

  • butter 120 g
  • powdered sugar 100 g
  • flour 300 g
  • egg 1 PC.
  • baking powder 1 tsp.
  • salt pinch
  • jam

You can use any jam; for example, I opened a jar of delicious lingonberry jam. I have enough ingredients for 22-25 pieces with a diameter of 5.5 cm. Powdered sugar in this jam cookie recipe used to facilitate preparation, the powder dissolves easily. You can use sugar instead of powdered sugar, but you will have to work a little harder with the whisk during cooking.

Preparation

We prepare all the products necessary for making cookies. The butter must be taken out in advance so that it becomes soft.

Mix the dry ingredients: sift together the flour, baking powder and add a pinch of salt.

In a large bowl, beat the butter and powdered sugar until creamy. This can be done either with a mixer or a whisk. Add the egg and mix with a whisk until smooth.

Add the dry ingredients to the butter mixture and knead into a plastic dough, form it into a ball, wrap it in cling film or a bag and put it in the refrigerator for 20-30 minutes.

Roll out the dough on a silicone mat (or baking paper) into a layer 4-5 mm thick and cut out circles with a diameter of 5-6 cm (or any other shape). For half of the blanks, cut a small hole in the middle. Before putting the pieces in the oven, they should be placed in the freezer for 15 minutes, this is necessary so that the dough does not spread too much during baking and holds its shape.

Bake for about 10-12 minutes in an oven preheated to 180°C. Cool the finished cookies on a wire rack or paper towel (to prevent the cookies from sweating and becoming wet). Now comes the fun part: putting the halves together. Spread the back side of the whole cookie with jam and cover the top with the other half in the form of a ring.

Just less crumbly. But when you bite into it, it just melts in your mouth. When choosing the filling, you can get creative and, for example, fill the cookies with melted chocolate instead of jam.

Ingredients:

  • butter – 100 g
  • powdered sugar – 100 g (plus powdered sugar for sprinkling)
  • egg white – 1 piece
  • flour – 200 g
  • salt on the tip of a knife
  • fruit jam
  • vanillin.

Preparing cookies:

  1. Leave the butter at room temperature for a while until it becomes soft. Place it in a mixing bowl and add powdered sugar.

  2. Beat the mixture using a mixer. Add protein to this mixture and mix.

  3. Sift the flour and mix.

  4. Turn the dough out onto a flat, floured surface. Knead the dough. Roll it into a ball and let the dough rise for 10 minutes.

  5. Then roll the dough into a sausage with a diameter of about 2 centimeters and cut it into pieces about 3 centimeters long.

  6. Roll each piece into a ball and make a depression in it using your thumb.

  7. Place the cookies on a parchment-lined baking sheet and place them in the refrigerator for 30 minutes.

  8. Preheat the oven to 200°C and bake the cookies. After 8 minutes, remove the baking sheet with cookies from the oven and make indentations in them again. Return the pan to the oven and bake for 15-20 minutes. The cookies should turn golden on the bottom and remain light on the top.

  9. After the cookies are baked, remove them from the oven and cool. Transfer it to a plate and sprinkle with powdered sugar.
